Salcis
The word S.A.L.C.I.S. is an acronym derived from the term “Società Anonima Lavorazione Carni Insaccati Siena,” which translates to “Anonymous Company for the Processing of Cured Meats in Siena.”
The history began in 1941, where due to the war and the restriction of resources, the butchers of Siena decided to join forces to process the local pork. A little later, around 1960, the processing of sheep’s milk began, and the Morbidi family became the sole owner of the company.
The main reason that led them to become sheep farmers in the 1980s was to create a complete supply chain and to give special attention to the raw material. By 2015, the sheep facility was established in the Fogliano area, 2 kilometers outside the city of Siena, which serves as a model construction for the welfare of the animals.
